  • 4 - 5 medium zucchinis, grated
  • 1 large onion, finely chopped

  • 1 red bell pepper, finely chopped
  • 1/2 cup white vinegar
  • 1/2 cup granulated sugar
  • 1 tablespoon salt
  • 1 tablespoon mustard seeds
  • 1/2 teaspoon celery seeds
  • 1/4 teaspoon turmeric
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon ground cloves

### Preparation Steps

1. Start by grating the zucchinis. You can use a box grater or a food processor for this step. Place the grated zucchini in a colander and sprinkle with salt. Let it sit for about 30 minutes to draw out the excess moisture. After 30 minutes, rinse the zucchini under cold water and squeeze out as much water as possible.

2. In a large saucepan, combine the chopped onion, green and red bell peppers, white vinegar, granulated sugar, mustard seeds, celery seeds, turmeric, ground ginger, and ground cloves. Bring the mixture to a boil over medium - high heat, stirring constantly.

3. Once the mixture is boiling, reduce the heat to low and add the squeezed zucchini. Stir well to combine all the ingredients. Let the relish simmer for about 30 - 40 minutes, or until it thickens to your desired consistency. Stir occasionally to prevent the relish from sticking to the bottom of the pan.
